June Goals: Mrs. Edition






 It’s June!  Four days until sweet summertime & six days until we are walking up the gangplank of the Carnival Triumph for five days of sun and fun.  I’ve never been a big vacation person, the thought of sleeping in a strange bed not knowing if the sheets and blankets have actually been washed really makes me anxious.  I’m determined to enjoy this cruise to the full extent and I’m letting it go! 


This school year has been so wonderful.  I have so enjoyed the 23 kinders and they are full of life, love and laughter.  They have made progress far beyond my expectation academically, emotionally and as citizens.  Watching my boys become gentleman, reciting the phrase, “Ladies first” and holding open doors is more rewarding than any academic growth.  I’ve watched my girls become confident in math and science, overheard them say, “I can be anything I want” and never once think they have to settle.  All of my students know I love them fiercely and know they will go far.  I say it almost daily, I seriously love my job!  All of that comes to a halt.  I cannot wait to see what they do as first graders next year.  My May goals were pretty successful and I have lofty ones for June.

Just Add Butter: Recipe 5


Chicken Pot Pie is pretty much one of my favorite meals of all time.  I’ve eaten chicken pot pie from the recipe many times, compliments of one of the sweetest ladies in my hometown.  She was sweet enough to pass along the recipe when Coach Husband & I were married but I have never ventured to attempt on my own until recently. 

Tonight we enjoyed Chicken Pot Pie and the sweet memory of women that have invested in me over the course of my life.  So grateful for parents that moved to small-town Texas and gave me a town to call my own with people who loved me enough to be involved in my life.


Chicken Pot Pie

2 chicken breasts
1 bag mixed vegetables
1 can cream of celery
1 can cream of chicken
2 deep dish pie crusts

Boil chicken until cooked through
Combine soups & vegetables in a large mixing bowl
Cut chicken in bite sized pieces and add to the soup mixture.
Line pan with pie crust & add chicken/soup mixture.
Top with pie crust and cut slits in the top.
Bake on 400 degrees until golden brown.

I’ve also eaten this pot pie with turkey instead of chicken and it was just as wonderful!  Mrs. Doreen was also famous for making multiple pies and freezing them to be baked at a later date.

Bon Voyage & Hola

We’re going on a cruise!

Words cannot begin to express my excitement about this crazy piece of news.  The very Type-A, OCD planner me booked a cruise to leave the DAY AFTER school let’s out.  Coach & I decided to jump at the chance to take a vacation together even though the next week will be an insane time crunch.  End of the year craziness and packing will consume our lives for the next week-ish but we are both so excited to have 5 days away from life to unwind, spend time together and do something we’ve never done before!  While we are young, childless and able…why shouldn’t we book a cruse that leaves in 10 days and sail to Mexico??  




So many friends have offered advice of what to do on excursions, what to expect on the ship and things to pack.  I’ve started my list of things to put in our suitcases and found a dogistter for Dixie & Duke.  This is going to be the perfect way to decompress after a long school year.  Cannot wait to say Bon Voyage with CH a week from tomorrow.

What I'm Loving Wednesday

What I’m loving Wednesdays might just be a new thing for me! 

1.     This book that Rebecca recommended for me!  It is one of my May reads from the library and I am loving it so far.




2.     Georgia Peach & Sweet Tea body wash and lotion from Bath & Body Works.  This stuff is an instant classic for me.  When Coach Husband got a whiff of it he said, “Oh that is you in smell form.”


3.     Spring football will be over TOMORROW!  Which means there will be no more 8:00 nights for Coach until fall.


4.     The possibility of a spontaneous trip with Coach.  If our passports work out, we’re saying adios to America for five days.
